Aloo Poshto

 A simple, easy and quick dish to have with rice from the Indian Bengali kitchen. A tasty meal for the vegitarian!

~INGREDIENTS~

•Potato (3)

•Poshto(poppy seeds) 50gm

•Red dry chilli(1)

•Green chili(1)

• Salt and Sugar

•Oil (better to use mustard oil)60g


~PREPARATIONS~

Cooking time- 15-20 minutes


~• STEP BY STEP PROCESS •~

• soak the poshto (poppy seeds)in water for atleast 1-2 hours because it makes the poppy fluffy.

• Peel and potatoes and cut it into 1cm cube and make sure to wash the potatoes after cutting.

• Now grind the soaked poshto (poppy seeds) with 2 chopped green chillies. You can bring the grind to a paste [[with 75g of water]] but always make it slightly coarse for texture.

• Add 60g of mustard oil in the pan/cauldron and wait till it gets lightly smoked and turns pale yellow.

• Add the dried red chilli and stir it for 5 seconds

 • Now add the potatoes into it and saute under medium heat for 5 minutes and don't let it to turn brown [[ stir frequently ]].

• Now add the poshto ( poppy paste).

• Mix it well.

• Add salt and sugar ( according to your taste preference).

• Fry on low heat for 4 minutes until the raw "poshto" smell goes away.

• when the pan dries out, add a splash of hot water and continue cooking.

• Now cover and cook on low heat

[ "Posto" tends to stick so stir fry it frequently ]

• Cook it till the potatoes are




softened

AND YOUR ALOO POSHTO IS READY TO SERVE

You can serve with plain 'dal' or simply with rice.
